Seafood and Chorizo Paella

Many people believe paella to be Spain’s national dish. However, most Spaniards consider it to be a regional Valencian dish (South East Spain!). Valencians, in turn, regard paella as one of their identity symbols.
Recipe:
2 tbsp olive oil
1 Tbsp butter
pinch of saffron
½ Red onion, finely sliced
1 Red pepper, remove the seeds and finely slice
1 tomato, remove the seeds and finely dice
70g Chorizo, finely chopped
220g quick cook rice
1 x 235g bag of seafood mix
50 ml white wine
150ml vegetable stock
1 bunch flatleaf parsley, roughly chopped
1 bunch spring onions, finely chopped
1 lemon, cut into 6 wedges
Method
1. Heat the oil and butter in a large pan.
2. Add the saffron, onion, pepper and tomato, and then cook for 3-4 minutes until the mix is softened.
3. Add the rice, white wine and vegetable stock and simmer for 5 minutes.
4. Add your seafood mix then simmer for five minutes or until the rice is tender. Take off the heat and cover the pan with a lid
5. Heat a frying pan with a little oil and fry the chorizo for 2-3 minutes.
6. Add to the rice mix along with the chopped parsley and stir well.
7. Pile onto a serving plate and garnish with lemon wedges and a sprig of parsley.
