To finish, serve with a nice dollop of salad cream! For an ultra crisp coating, give them 5 minutes in a deep fat fryer, followed by 10 minutes in the oven. However, if you don’t have a fryer to hand, this recipe is a good alternative.

 

Scotch Egg

Approx. Cost: £2.50

Preparation Time: 15 mins

Cooking Time: 25 mins

Serves: makes 4

Recipe:

4 Eggs, at room temp.
10g Butter
2 Garlic cloves, finely chopped
1 bunch Parsley, finely chopped
450g Sausage meat
2 Eggs for sausage mix & coating
Salt and Pepper
150g plain flour
200g fine breadcrumbs

Method
1. Set the oven to 180°C/gas 4.

2.Bring a large pan of water to the boil. Place the 4 eggs at room temp. in the water and boil for 5 minutes. Drain carefully and run under cold water for 3 minutes. Peel the boiled eggs and set aside.

3. Place the sausage meat into a large bowl. Stir in the chopped parsley; add 1 of the eggs and season with salt and freshly ground black pepper. Pack this mixture around each egg to form a thin coating of sausage meat.

4. Season the flour and beat the remaining egg. Roll the sausage eggs in the seasoned flour and then dip briefly into the egg.

5. Roll the sausage eggs in the breadcrumb until coated well.

6. Cook on a lightly oiled tray for 25 minutes
, until firm and golden.

6. Cut in half and serve with a nice dollop of salad cream
