Grilled Sardines with Gremolata

Serves: 4
Sardines are a great fish if you can get over the bones! They must be really fresh to get the best out of them, with gremolata it’s a perfect combination.
Recipe:
Gremolata;
100ml Olive Oil
2 Garlic cloves
Juice and zest of 1 lemon
1 Bunch of flat leaf parsley
Salt and pepper
8 Sardines, heads removed
Salt and pepper
Olive oil
lemon wedge to garnish
Pre-heat grill to high
Method
1. Place sardines on a tray, drizzle with oil and season with salt and pepper and place under the grill for 1-2 minutes.
2. To make Gremolata put olive oil, garlic, lemon juice and zest, parsley, salt and pepper in smoothie maker or blend with hand blender.
3. Serve sardines on a plate with gremolata spooned over the top and garnished with a lemon wedge.
