Blueberry Muffin

Serves: 6 - 8 muffins
Ummmmm…muffins! For me there is only one, the blueberry muffin! This mixture will only work well if you leave it to rest in the fridge for 3 hours or preferably overnight!
Recipe:
Muffin tray and cases
110g Butter
110g Plain Flour
65g caster sugar
2 large eggs
1½ tsp baking powder
125g blueberries
Method
1. Cream the butter and sugar together then slowly add the eggs. Add the flour, baking powder and stir to combine, then refrigerate for at least for 3 hours or preferably overnight.
2. Place a spoonful of muffin mixture into each muffin case, filling each to just over half way. Stud each muffin with about 8-10 blueberries.
3. Bake in an oven set at 200’c for 20 minutes.
