Cream of Tomato

Good old cream of tomato soup. It may not be a well known brand but it still tastes damm good!

Recipe:

2 onions, finely chopped
1 stick celery
1 carrot, finely chopped
1 clove garlic, finely chopped
2 Tbsp oil
450g fresh ripe tomatoes, halved
1 litre vegetable stock
2 tsp sugar
salt and pepper
100ml double cream

Method

1. Heat the oil in a large saucepan and add the onions, carrot and celery and garlic. Cover and cook gently for 10 minutes until soft.

2. Add the sugar, salt, pepper and tomatoes. Stir and cook for another 5 minutes.

3. Add the stock, bring to the boil and simmer for 10 minutes. Liquidise until smooth. Stir in the cream at the end.
