A tasty little soup! The yoghurt and honey give this recipe a real lift!


 

Carrot and Coriander Soup

Approx Cost: £4

Preparation time: 15 mins

Cooking Time: 20 mins

Serves: 4

A tasty little soup! The yoghurt and honey give this recipe a real lift!

Recipe:

oil
1 Large Onion, chopped
1 garlic clove, chopped
2 tsp coriander seeds
250g Carrots, peeled,and finely chopped
750ml Vegetable stock (2 Cubes!)
Salt and pepper
4 Tbsp Greek yoghurt
4 Tbsp Honey

1 Bunch Coriander, roughly chopped

Method

1. Heat the oil in a saucepan, add the onion, garlic and coriander seeds, cook over a medium heat for 3 - 4 minutes.
2. Add the carrot and hot vegetable stock to the pan. Bring to the boil and simmer for 10 -15 minutes, or until the carrot has softened.
3. Remove the pan from the heat, blend the soup until smooth using a hand blender and then mix in the chopped coriander.
4. To serve, pour the soup into a serving bowl and top with Greek yoghurt and a drizzle of honey.
