Red Pepper, Broad Bean and Herb Cous Cous

Cous cous is so versatile and will lend itself to any flavour. I use jars of roasted red peppers for convenience, they ar; just as good as roasting your own.
Recipe:
200g Cous Cous
Boiling water
Butter or Olive oil
150g Roasted Red Peppers
150g Frozen Broad Beans, defrosted and popped from their shell!
1 Bunch Parsley, finely chopped
½ Bunch Basil, finely Chopped
4 Tbsp Basic Dressing (See Salad recipes!)
Salt and Pepper
METHOD
1. Place your cous cous in a bowl, add a knob of butter or a glug of olive oil, then pour over water to cover plus around 1cm on top. Leave for 10 minutes and fluff with a fork.
2. Roughly chop your red peppers and add to your cous cous along with broad beans, herbs, dressing and a pinch of salt and pepper.
3. Give it a good stir and away you go!
