Leek and Potato Soup

Soup is great on the move, I used to take mine in a travel mug! You can freeze what you don’t use in portions for another day.
Recipe:
1 tbsp vegetable oil
1 onion, sliced
200g potatoes, peeled and cubed
2 medium leeks, sliced
1 litre vegetable stock made from cubes
150ml double cream
salt and pepper
Method
1. Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3-4 minutes to soften.
2. Add the vegetable stock and bring to the boil. Season well and simmer until the vegetables are tender.
3. Whizz with a hand blender or in a smoothie maker until smooth. Reheat in a clean pan, stir in the cream, heat through, season and serve.
