Christmas White Chocolate and Cranberry Cookies

A great little treat! If you do have any mix left over, (I doubt you will!) then check out hints and tips for a neat idea!


Recipe:

100g White Choc Chips
100g Dried Cranberries
125g Butter
120g Granulated sugar
50g soft Brown sugar
1 Egg
150g Plain flour
½ Tsp baking powder
a pinch of salt

Method

1. Heat the oven to 190’c. Line two trays with greaseproof paper.
2. Heat the butter in a small saucepan until just melted.
3. Put the two types of sugar into a mixing bowl. Pour the butter over, then beat well with a wooden spoon.
4. Add the egg, beat until well blended.
5. Sift the flour, baking powder and salt into the mixing bowl and stir the mixture together
6. Dot heaped pudding spoonfuls of the mixture onto baking sheets, leaving plenty of space in between so they can spread out,
7. Pop the trays in the oven and bake for 8-10 minutes, until the cookies are just turning golden brown.
8. Leave the cookies on the baking sheets to harden for a minute or two, then carefully lift up the baking parchment and enjoy.
