Cabbage and Bacon, great with Coq au vin!
Recipe:
Oil, butter
1 x Savoy Cabbage
150g Streaky bacon, cut into thin strips
Salt and pepper
Method
1. Place a pan of salted water on to boil.
2. To prepare the cabbage, remove any of the older, bitter leaves from the outside. (Usually very dark green!) Place the cabbage on your chopping board with the root facing up and slice down through the middle. Cut each half in half again. Now remove the hard core. Slice each quarter of cabbage into 4 slices, lengthways. Remove any thicker pieces, and wash the rest of the leaves.
3. Place a frying pan on a high heat, add a little oil and fry the bacon pieces until crisp and turn off the heat. Meanwhile, at the same time, boil the cabbage for a couple of minutes and drain.
4. Add the hot drained cabbage to the frying pan with bacon. Add a knob of butter, toss and serve.
