Chocolate Mousse

This recipe dates back to the 1960’s, so I’m told! This was one of the first recipes I ever learnt when I first started catering college. It requires a lot of whisking, so if you are making it without the aid of electrics, rope in a friend!

Recipe:
200g Dark Chocolate
3 Large eggs, separated
40g Caster Sugar
120ml warm water

Method
1. Place chocolate in a glass bowl over a pan of simmering water (Bain marie!) and add the warm water to the chocolate. Melt until smooth and glossy.
2. Meanwhile separate the eggs into two bowls, whites and yolks. Whisk the white to form soft peaks. Add the sugar to the whites a third at a time until smooth and glossy.
3. Remove chocolate from the heat and leave to cool slightly. Add egg yolks one at a time beating after each one.
4. Carefully fold in the glossy whites with a metal spoon. Take care and do not rush. The longer it takes, the better the mousse!
5. Divide between four dishes and chill overnight.
