A 500g block of puff pastry is around £1 from the chilled section of the supermarket. Divide this into 6, cling wrap and freeze what you don’t use ready for next time!

There is ready rolled pastry if you don’t have a rolling pin!

The great thing about this recipe is you can top the tart with whatever you like, no matter how obscure your taste may be!

Recipe makes just one for you, but multiplies for more!

Tomato, Red Onion and Cheese Tart

Puff Pastry
1 Large Tomato, thinly sliced
1 Small Red Onion, thinly sliced
75g (a small handful!) Grated Cheese
Salt and pepper
Worcester sauce (only if you have it!)

Pre heat oven to 190°c/gas 5

Method:

1. Roll out pastry to a rough square until a couple of mm thick.

2. Score a line around the edge about a cm or so in. Place on a greased (a little oil!) or lined (grease proof paper!) baking tray and place in the fridge.

3. Now slice your tomato, red onion and grate your cheese.

4. Lay the tomato on the pastry in side the marked edge then season with salt and pepper. Lay the red onion and cheese on top and a splash of Worcester sauce if you like.

5. Bake in pre-heated oven for 12-15 mins or until golden brown. EAT!
