Suitable for Vegetarians!

These are great as a snack on their own or with a salad as a meal and taste great with pretty much any sauce or dressing! An easy thing to make when you’ve loads of hungry friends to feed!

 

Sweetcorn and Red Pepper Fritter

Approx Cost: £1.50

Preparation time: 10 mins

Cooking Time: 5 mins

Serves: 2/3

These are great as a snack on their own or with a salad as a meal and taste great with pretty much any sauce or dressing! An easy thing to make when you’ve loads of hungry friends to feed!

Recipe:

200g Sweetcorn
1 Red Pepper, diced
½ Bunch Spring Onions, finely sliced
1 Egg
60g Plain Flour
½ teaspoon Baking Powder
A pinch of Salt and Pepper
Vegetable Oil for frying

Pre-heat oven to 120°C or gas No.1

Method

1. Whisk together the egg, flour and baking powder with salt and pepper

2. Roughly chop half the sweetcorn and add to the above mix with the rest of the sweetcorn, red pepper and spring onions.

3. Heat 2 Tablespoons of vegetable oil in a non-stick frying pan over a medium heat. Drop in 2 tablespoons of mixture for each fritter; they should take 1-2 minutes on each side. (Make 2/3 at a time so you don’t over crowd the pan!)

4. Drain on kitchen paper and keep warm in the oven while you finish the rest.
