Roasted Mediterranean Vegetable

Serves: 4 portions

I love roasted Mediterranean vegetables with a piece of grilled meat or fish. Tossed in a salad or pasta or even in a sandwich with mozzarella and basil!

Recipe:
1 Aubergine, chopped into 2cm pieces
2 Courgette, chopped into 2cm pieces
2 Medium Red onions, cut into 8 wedges
2 each of Red, Green and Yellow Pepper, chopped into 2cm pieces
1 Clove Garlic, Finely chopped
Olive Oil
Salt and Pepper
Sprig of Rosemary (optional)

Method
1. Pre-heat oven to 240’c or as hot as possible.
2. Throw all the ingredients, including the olive oil, salt, pepper and rosemary, if using, into a baking tray. Toss to mix.

3. Roast for 15-20 mins until softened and slightly burnt around the edges.
