Recipe:
400g dried Spaghetti
200g Smoked Streaky Bacon
2 tbsp Oil (Whatever you’ve got!)
3 garlic cloves, finely chopped
handful of flatleaf parsley leaves, finely chopped
3 large eggs, beaten
50g finely grated Parmesan
salt and freshly ground black pepper, to taste
5 tbsp Double Cream (optional!)
Method
1. Bring around 4 litres of water to the boil in a large saucepan with a large pinch of salt. Add the spaghetti and cook for nine minutes, or until al dente (tender).
2. Meanwhile, cut the Smoked Bacon into lardons (short little strips), about ½ cm wide.
3. Heat a frying pan over a medium-high heat, add the oil and the Smoked Bacon and fry until golden. Add the garlic and parsley and cook for a few seconds, then remove from the heat and set aside.
4. Drain the spaghetti well, tip into the frying pan straight away with the pancetta, garlic and parsley, add the beaten eggs (and cream if required!), half the grated parmesan cheese and then toss together well.
5. Season to taste with salt and black pepper. The heat from the spaghetti will partly cook the egg, but still leave it moist and creamy. Sprinkle with the rest of the cheese and serve.
