Asparagus with Hollandaise

A little dish for someone who likes a challenge! Asparagus with hollandaise is a classic. Asparagus is at the height of its season in May/June, so it seems perfect for this time of year.
Recipe:
14 – 18 Asparagus , 2-3cm of tough stalk removed from the bottom
For the Hollandaise:
2 egg yolks
110g/4oz butter, melted
salt and ground black pepper
2 tbsp Lemon Juice, or to taste
1 tsp Dijon mustard
Method
1. Bring a large pan of salted water to the boil
2. Whisk the egg yolks, salt, pepper and lemon juice (and mustard if using!) in a bowl.
2. Whisk in warm melted butter in a steady stream. Adjust lemon juice if required. Keep warm.
3. Cook Asparagus for 4-5 mins until tender. Drain and serve divided between two plates. Spoon the hollandaise over to finish. Serve immediately.
