Satay Chicken

Beware those with nut allergies, this is not one for you! This recipe shows how the humble jar of peanut butter helps turn chicken into a delight!

Recipe:
3 Large Chicken Breasts, cut into chunks

3 Table Spoons of Peanut Butter
Juice of 2 Limes
100g Grated Creamed Coconut
1 Garlic Clove, finely chopped

A splash of Worcester sauce
1 Red Chilli, deseeded and finely chopped
4 large Wooden Skewers
Salt and Pepper

Method
1. Add the peanut butter, lime juice, creamed coconut, garlic, chilli and Worcester sauce to a bowl and mix to combine into a marinade.
2. Add chicken to the marinade and leave to marinate for 2/3 hours. In the meantime soak the skewers in cold water. (This will stop them from burning on the Barbie!)
3. Divide the chicken between the skewers and grill on the bbq for 10 – 15 minutes or until cooked. Alternatively start in the oven. (See hints and tips!)
4. Serve with a nice crunchy salad, rice or naan bread.
