Banana Cake

Serves: 6 – 8 portions!
Best in a loaf tin but will do in a round cake tin! Great if you like bananas!!
Recipe:
350g bananas
200g self raising flour
75g butter
175g soft brown sugar
2 eggs
Method
1. Preheat the oven to 180’C and grease a 1kg round cake tin or loaf tin.
2. Peel and mash the bananas.
3. Cream the butter and sugar together and then beat in the eggs.
4. Add the bananas to the mixture.
5. Fold in the flour.
6. Turn into the tin and bake for about 45 mins or up to an hour, until firm to touch and cooked through.
