Grilled Chicken and Vegetable Salad

One for the “George Forman Grill”! So easy, just slice, grill and dress!
Recipe:
2 Chicken breasts, cut into 10 strips
1 Courgette, cut into 6 strips, lengthways
1 small red onion, peeled cut into thick rings
1 Red pepper, stalk and seeds removed, cut into 4
1 Yellow pepper, stalk and seeds removed, cut into 4
1 Bag of your favourite salad
Olive oil and balsamic vinegar
Salt and pepper
Method
1. Put all the chicken and vegetables in a bowl, add a little olive oil, salt and pepper and mix.
2. Pre-heat your grill, lay the vegetable and chicken out and cook for 6-10 mins
3. Clean your bowl then add your vegetables and chicken and leave to cool.
4. Add the lettuce along with a drizzle of olive oil and balsamic. Add a little salt and pepper, toss and serve in individual bowls!
