Pickled Eggs with Beetroot

Pickled eggs: you either love them or hate them! The addition of beetroot makes for something different! Great with a slab of cheese and crusty bread!
Recipe:1 x 340g Jar Baby Beetroots
55 g brown sugar
120 ml white vinegar
120 ml cold water
3 gms salt
6 hard-cooked eggs (boiled for 8-10 minutes!)
Method
1.Pour the beet juice into a medium-size pot. Stir in the brown sugar, vinegar and water. Bring to the boil and simmer for 5 minutes.
2. Place the beets into the liquid mixture and cook for another 2 minutes then allow to cool.
3. Place the cooked eggs (with the shells removed!) in a container or jar with a tight-fitting lid. Pour the liquid and beets in with the eggs. Store the container in the refrigerator for a minimum 5 days before eating.
