Chestnut Mushroom Soup

Chestnut mushrooms offer a lot more flavour for only a little extra cost! Cooking the ingredients in butter really helps make the most of that mushroom flavour!
Recipe:
1 small leek, chopped
3 cloves garlic, chopped
50g butter
250g Chestnut Mushrooms, sliced
2 sprigs fresh thyme
200ml Chicken stock (2 stock cubes!
50ml Milk
Salt and pepper
Method
1. Cook the leeks and garlic in the butter for 4/5 minutes or until softened.
2. Then add the field mushrooms and thyme, cook on high for a couple of minutes.
3. Cover with the chicken stock and milk and cook for 10 minutes.
4. Blend in a food processor or with a stick blender until smooth.
5. Season with salt and pepper, then serve.
