Prawn and Avocado Salad

Prawn and Avocados, a well known combo! Served here with Lemon and Cracked Pepper Mayonnaise to add a little kick.
Recipe:
300g Peeled Baby Prawns
1 Ripe Avocado
1 Small Cos lettuce, shredded
¼ Cucumber, finely sliced
10 Cherry Tomatoes, Cut in half
4 Tbsp Mayonnaise
Cracked or freshly milled black pepper
Zest and Juice of half a lemon
Method
1.Slice the avocado in half around the centre and remove stone. Peel away the skin and slice.
2.Place lettuce in a bowl. Scatter cherry tomatoes, cucumber and avocado over the top.
3. Mix the mayonnaise with the lemon juice, zest and cracked pepper. Add the prawns and mix well.
4. Spoon the mixture onto the salad and tuck in!
