A little tip I learnt along the way, if you breadcrumb something it will go further! Here, one chicken breast can feed two people!

   Parmesan Chicken with Courgettes and Spinach

Approx. Cost: £3.50

Preparation: 20 mins

Cooking Time: 15 mins

Serves: 2

A little tip I learnt along the way, if you breadcrumb something it will go further! Here, one chicken breast can feed two people!

Recipe:
Oil for frying
1 Large Chicken Breast, cut in half lengthways.
75g Breadcrumbs
40g Grated Parmesan (the powder stuff will do fine!)
1 Large Egg, beaten with a tbsp of milk
3 Tbsp Plain flour
Butter
2 Courgettes
300g Bag of Baby Spinach
Salt and Black pepper

Method
1. Pre heat your oven to 180’c
2. To crumb the chicken, place your flour on a large plate with a little salt and pepper, put your beaten egg mix in a bowl and put your breadcrumbs and parmesan together on a plate and mix.
3. First place you chicken in the flour, pat off any excess. Next, put it into the egg mix and turn to coat. Finally onto the parmesan crumbs, turning and patting on the mixture. Repeat with the other piece of chicken.
4. Heat a little oil in a frying pan. Cook the chicken for 2 minutes or until golden brown, turn and cook on the other side for 2 minutes. Place on a baking tray. Wipe out the frying pan.
5. Bake in the oven for 10/12 minutes.
6. Meanwhile, slice your courgettes in half lengthways and thinly slice. Heat your frying pan with a little oil and add the courgettes. Season with salt, pepper and cook for 2/3 minutes, turning occasionally. Now add the spinach, a knob of butter, mix and serve.
7.Place the chicken on a plate and spoon over the courgette and spinach mix.
