    One from the first day at catering collage! They taste great, warmed with a scoop vanilla ice cream!


    Christmas Pudding Ice Cream ~ serves 4 ~ Costs £2

    A great way to use up any old Christmas pud!

    Rice Pudding ~ Serves 2-4 ~ Cost £2

    This is a recipe I’ve pinched from James Martin. It uses risotto rice and I think gives a much better end product. Miles away from that nasty “glue” of school days!

    Vanilla Creme Brulee ~ Serves 4-6 ~ Cost £3.50

    You will need glass or ceramic ramekins for this dish. Available from supermarkets, cook shops and most “pound” shops! The caramelised sugar works best with a mini blow torch but does well under the grill.

    Lemon Posset

      Probably the ultimate English dessert! So, so simple that I don’t believe anyone could not make this one work!

    Eton Mess ~ serves 4 ~ Cost £3.50

    Traditionally served at Eton College’s annual prize-giving celebration picnic on the "Fourth of June" (actually celebrated on the last Wednesday in May). Thanks to this recipe you can now all enjoy this delicious pud!

    A pannacotta is an Italian set cream using gelatine. You can flavour this basic recipe with whatever you like!

    Chocolate Mousse ~ serves 4 ~ cost £3

    Suitable for Vegetarians!

    This recipe dates back to the 1960’s, so I’m told! This was one of the first recipes I ever learnt when I first started catering college. It requires a lot of whisking, so if you are making it without the aid of electrics, rope in a friend!
